 Delicious Lemon Curd Recipe

Today we're sharing this amazing recipe we found at Kaloria! Kaloria is a cooking blog that focuses on comfort food! Everything she makes looks delicious and will make you hungry. Empty tummies beware! The recipes range from savory to sweet and look fairly quick & easy! Enjoy the lemon curd recipe!
Recipe gives approx. 1 cup of lemon curd.
  • 3 lemons
  • 100g/ 1/2 cup of granulated sugar
  • 4 egg yolks
  • 1/2 tsp. gelatine powder (if used for macarons, use 2/3 tsp gelatine powder)
  • 2 tsp. water
  • 115g/1 stick of cold butter
  • 1 pinch salt
  1. Grate the zest of lemons and squeeze the juice.
  2. Add sugar, lemon zest and 80 g of lemon juice in a blender. Blend at low speed until the sugar is dissolved.
  3. Add the egg yolks and blend again, at low speed until the mixture is smooth.
  4. Pour the mixture into a small saucepan.
  5. Soak the gelatine powder and water in a small bowl. Set it aside.
  6. While doing step.7, cube the butter.
  7. Cook the mixture slowly, under close supervision. Keep stirring until the mixture just boils.
  8. Pour the mixture back into the blender. Quickly add the soaked gelatine and the cold butter.
  9. Blend at medium speed until the mixture is smooth and even.
  10. Strain the lemon curd before putting it to cool in the refrigerator. Leave lemon curd to cool for approx. 3-4 hours in the refrigerator, preferably overnight.
Attention! Lemon curd can be stirred/whipped gently just prior to use, if you want a smoother consistency.
